INGREDIENTS: (makes about 12)
8 small potatoes
1 onion
1 tbsp olive oil or butter
3/4 lb / 350 g ground meat
salt and pepper to taste
1-2 eggs, beaten
1-2 cups panko bread crumbs
1/2 cup flour
DIRECTIONS:
Peel potatoes making sure to cut out the eyes. Cut into bite-sized pieces. Put them into water and set aside. Finely chop the onion. Rinse the potatoes and put into a large pot. Cover with water and boil until tender. Pour water out continue to heat over low heat to evaporate any excess moisture.
Put a tablespoon of oil or olive oil in a frying pan. Saute the onions until translucent. Add in the ground meat along with pepper and salt. Saute until meat is no longer pink. Dump the meat mixture into the bowl of potatoes. Mix well, mashing some of the potatoes. Check to taste and if needed, season with more salt and pepper.
Shape the mixture into patties. Cover the croquette patty with flour followed by a dip in the egg wash. Then coat well with the panko bread crumbs. Repeat until they are all done. Cover and chill the patties in the refrigerator for 30 minutes.
Deep fry in hot oil until crispy and golden brown. Serve with tonkatsu sauce.

It’s a bit of a long video but the techniques I’m going to show you will help you to make a rouxless curry that’s better than the boxed kind using the power of caramelized vegetables and fruits. These are relatively quick to make since you’re using pre-made pastry…feel free to make your own, but with everything that’s going on in the world just now, you may find it easier to find ready made pastry than everything you’ll need to make it from scratch.
I know in this country, flour is pretty hard to find. But because you’re not spending half the day making your own puff pastry….you’ll have time to spend a little extra time on your filling :) which to me, is the most important part!

1 x celery stalk
1 x carrot
150g/5.03oz pancetta
500g/17.06oz beef mince
200g/7.05oz pork mince
500ml/16.8oz tomato/basil sugo/tomato passata
Extra virgin olive oil
1 x glass white wine
1 - 2 x glasses water
Salt and pepper
Dried oregano (optional)
UTENSILS:
Sharp knife
Chopping board
Hand blender
2 x Medium – large size pot
Wooden spoon
Tongs
Large serving spoon
METHOD:
1. Bolognese sauce starts with a delicious foundation – soffrito with a twist! Start by roughly chopping the carrot, onion and celery, and cutting the pancetta into strips.
2. Mix all chopped up ingredients together and combine well using a hand blender.
3. Place medium-large size pot on the stove at a low-medium heat.
4. Once the pot has started to warm, add 4-5 tablespoons extra virgin olive oil (EVOO).
5. When the oil has warmed up, add the soffrito and combine with the oil using a wooden spoon.
6. Leave the soffrito to simmer for around 10 minutes.
7. Add the beef and pork mince to your Bolognese sauce mix, breaking down the chunks of meat using a wooden spoon as you cook it.
8. Next you can sprinkle a generous amount of salt along with dried oregano (or an alternate herb of your choice), along with a glass of white wine.
9. Leave the Bolognese sauce to simmer for approx. minutes, stirring every so often. This should start to bubble as the wine evaporates.
10. Now it’s time to add the bottle of passata/tomato sauce and a sprinkle of pepper before continuing to mix once again.
11. The final ingredient is 1 x glass of water. Add this to your Bolognese sauce, mix through and cover, leaving it to cook for 30 minutes.
12. Stir the sauce every 10 minutes so the meat cooks evenly and nothing sticks to the pan.
13. Once 30 minutes have passed, uncover and mix well using a wooden spoon.
VINCENZO’S PLATE TIP: If there is not a lot of moisture in the pan, add one more glass of water to your mixture and bring the cooking temperature down slightly as you want the Bolognese sauce to remain nice and moist.
14. At this point if there are any thick chunks of meat, break them down again using your wooden spoon before leaving the sauce to simmer once more for 30 minutes, stirring every ten and leaving the lid off.
15. In the meantime, boil 5L water in a second pot and add a tablespoon of rock salt, leaving it to dissolve.
16. Once the sauce has finished cooking and your water has boiled, add your choice of pasta to the water and cook according to the packet instructions.
17. While the pasta is boiling, prepare a large fry pan for mixing!
18. Place a frypan on the stove at a low heat, and add a generous spoonful (or two!) of Bolognese sauce, covering the base.
19. Next, add the strained pasta into the pan along with 2 x spoonful’s of pasta water.
20. Mix this through until the pasta is completely lathered before adding another generous amount of Bolognese sauce and mixing again.

Chicken Chow Mein Ingrediens
Serves 3 to 4
For Marinate Chicken
1 (1/2 lb.) Boneless, skinless chicken breast
1 tsp. Soy sauce
1 Tbs. Shaoxing wine (Chinese cooking wine), sake or dry sherry wine
1/2 tsp. Chinese five spice
1/2 tsp. Baking soda
Pinch of black pepper
For the Sauce
3 Tbs. Oyster sauce
1/2 cup Chicken stock
For the Aromatic Vegetables
3 Cloves garlic (approximately 1 Tbs.)
1 oz. Fresh ginger (approximately 1/2 Tbs.)
1 Red chili
For the Vegetables & Noodles (You can substitute vegetables for your taste or what’s available as same amount as recipe calls.)
10 oz. Precooked & ready to use Chinese egg noodles (If you are using dry one, prepared by soak them in hot water until soften and then drain.)
2 oz. Shiitake or button mushrooms (approximately 2 large or 4 small size mushrooms)
4 oz. Bamboo shoot (approximately 1/4 cup)
4 oz. Baby bok choy (approximately 3 to 5 of baby bok choy)
3 Green onions
4 oz. Bean sporouts
For Garnish
1 tsp. Toasted sesame oil
1 tsp. Toasted sesame seeds
3 Tbs. Cooking oil


You only need 20 minutes to make this spicy dumpling noodle soup!

Ingrediënten:
500 gram mie
zonnebloemolie
3 sjalotjes
5 teentjes knoflook
5 stuks bosui
100 gram fijne wortelreepjes
2 el Knorr Aromat (bouillonpoeder)
1 tl witte peper
Bereidingswijze:
STAP 1: Mie bereiden volgens gebruiksaanwijzing op de verpakking.
STAP 2: 5 eetlepels olie verhitten, sjalotjes (fijngehakt) en de knoflook (fijngehakt) hierin lichtbruin fruiten.
STAP 3: Bosui (in kleine stukjes gesneden), wortel, bouillonpoeder en witte peper toevoegen en 5 minuten roerbakken.
STAP 4: De bereide mie toevoegen en het geheel, onder voortdurend omscheppen, 5-7 minuten op laag vuur opbakken.
Serveertip:
Serveren met Ketjap Kip Speciaal
Variatietip:
Voeg gegrilde kip of ham naar smaak toe en 2 theelepels sesamolie de laatste minuut. Varieer de groenten met paksoi en taugé.
